TEYMIÐ OKKAR

How It All Began

Founded in 2024 by Tom Griffith, Sapphire Bespoke Retreats was born from a lifelong passion for real estate, hospitality, and meaningful experiences. Some people stumble into their careers, but not Tom—he was practically raised in the world of property management and luxury service. When he moved back to Colorado, he immediately recognized the untapped potential for a more personal, high-end approach to property management in Breckenridge. Excited by the opportunity, he called Audrey—his longtime friend, former real-estate colleague, and creative partner in countless whiteboard brainstorming sessions—knowing she’d see the vision instantly. Audrey dove in to craft Sapphire’s visual identity, storytelling, and marketing foundation, bringing the brand to life through design, digital strategy, and authentic connection.


Now, a year and a half later, Sapphire Bespoke Retreats proudly manages eight exceptional properties—with three more on the way—and has expanded its footprint into Keystone. What began as a shared vision has evolved into a growing boutique brand defined by craftsmanship, integrity, and a commitment to delivering unforgettable experiences for both owners and guests.

 Teymið Okkar

(pronounced “TAY-mith OHK-ar” — meaning “Our Team”)


In Icelandic, Teymið okkar means “Our Team,” reflecting unity, trust, and shared purpose—the heart of Sapphire Bespoke Retreats. Rooted in our Nordic-inspired identity, it represents our philosophy of blending diverse talents and visionary thinking to create more than just a place to stay. We craft meaningful, immersive experiences that feel personal, intentional, and unforgettable.

Tom Griffith, Founder & Property Director

Tom is a seasoned professional in real estate and hospitality with over fifteen years of hands-on experience in property management and luxury real estate. His career along Florida’s Gulf Coast—including five years managing elite properties on Lido Key—honed his mastery of high-end property care, owner relations, and guest experience. Known for his relentless commitment to communication, service excellence, and personal connection, Tom ensures that every homeowner and guest feels like a VIP.   

A seasoned traveler and outdoor enthusiast, Tom brings a global perspective to hospitality but calls the Rockies home—sharing it with his spouse, two huskies, a chocolate lab, and an enduring love for mountain living. 

Audrey Townsend, Marketing & Design

Audrey Townsend is a marketing strategist, real-estate professional, and creative designer who specializes in building brands that captivate and connect. With extensive experience in real estate and in helping start-ups define their visual and strategic identity, Audrey brings a rare blend of creative vision and business insight. As a graphic designer, web designer, and SEO specialist, Audrey integrates design, social media, and digital marketing to craft cohesive brand experiences that resonate across platforms. At Sapphire Bespoke Retreats, she combines these skills to showcase each property’s Nordic-inspired aesthetic and to create meaningful, story-driven connections with guests.

  • Thematic Names: Properties feature inspired names like Elv Haus (River House) and Skalli House (symbolizing strength).

  • Scandinavian Design: Incorporate minimalist aesthetics, natural materials, and light color palettes.
  • Interactive Features: Offer board games, puzzles, and recipe cards for traditional Nordic dishes.
